RECIPE - EXOTIC VEGETABLE FRIED RICE
(serves 2)

Ingredients:
5 cloves Garlic
1 Onion (small), chopped small
¼ Zucchini (green), cut in strips
1 Carrot (medium), cut in small cubes
¼ Bell Pepper (green), cut in medium cubes
¼ Cabbage (small), chopped finely
1 tbsp. Sunflower or any vegetable oil
Salt to taste
1 tsp. Pepper Powder
1 cup Jeera Samba Rice (I find this variety tastes the best for Chinese food but you can use any
rice of your preference)
1 liter Water
1 tsp. Synthetic vinegar (this is optional)
Prep-Work:
Put the water in a saucepan and add a little salt to
it and switch on the gas to high flame. After add the rice to it and bring it
to a boil. Keep stirring intermittently. Take a spoon to scoop out the rice to check if it is nearly done (Keep the rice ¾
cooked as it should not be fully soft as that will make your rice too soft and
mashed up) . Using a colander strain the remaining water out. Keep the
rice aside.
Cut the vegetables in the shapes indicated along with the ingredients as well as depicted in the photograph below.
Method:
Heat a wok
on medium flame. Add the garlic and stir for a minute. Add onions and keep
stirring for 30 secs before adding the carrots. Stir intermittently till
carrots give out a slight glazed look. (approx 30 secs to 1 minute) Add the
zucchini and stir till very slightly soft. Add the Bell Peppers and stir for
another 30 seconds. Now add in the cabbage , pepper powder and salt to taste.
Stir well and immediately add the rice. Mix it well. You can now add the vinegar
if you require. Give it one more quick mix and switch of the flame.
Best served
plain though you can serve any accompaniment of your choice. You can also add
in mushrooms or broccoli if you want to add more vegetables.
